Ingredients
  

  • 1.5 lbs flank or sirloin steak
  • 3 chipotle peppers in adobo sauce adjust to taste
  • 2 tbsp adobo sauce
  • 3 cloves garlic minced
  • 2 tbsp lime juice freshly squeezed
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • In a blender, combine chipotle peppers, adobo sauce, garlic, lime juice, olive oil, cumin, oregano, salt, and pepper. Blend into a smooth marinade.
  • Place steak in a bowl or zip-top bag and coat with marinade. Marinate for at least 4 hours, preferably overnight in the fridge.
  • Heat grill or cast-iron skillet over high heat. Sear steak for 3–5 minutes per side depending on thickness, or until internal temp reaches 135°F (medium-rare).
  • Transfer steak to a plate and let it rest for 5–10 minutes before slicing thinly against the grain.
  • Serve in bowls, tacos, burritos, or over salad with your favorite Chipotle-inspired sides and toppings.

Notes

Swap steak with tofu or portobello mushrooms for a plant-based version. Use smoked paprika instead of chipotle peppers for a milder taste. Pairs great with cilantro lime rice, black beans, and guacamole.
