Ingredients
  

  • 6 cups crumbled cornbread prepared ahead and cooled
  • 4 cups stale bread torn into small pieces
  • 1 cup onion diced
  • 1 cup celery diced
  • 1/2 cup butter for sautéing
  • 3 eggs beaten
  • 4 cups chicken broth plus more if needed
  • 2 cups cooked chicken shredded (dark meat preferred)
  • 1 tbsp poultry seasoning
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Sauté onions and celery in butter until soft and fragrant. Set aside to cool slightly.
  • In a large bowl, combine cornbread, stale bread, shredded chicken, sautéed vegetables, poultry seasoning, salt, and pepper.
  • Stir in beaten eggs. Gradually add chicken broth until the mixture is moist but not soupy.
  • Transfer mixture to prepared baking dish. Drizzle extra broth on top for moisture.
  • Cover with foil and bake for 25 minutes. Uncover and bake an additional 20 minutes or until golden brown and bubbling around the edges.

Notes

For extra flavor, stir in cooked sausage or diced jalapeños. This dish can be made a day ahead and reheated with extra broth to keep it moist. Freezes well before baking.
