Ingredients
  

  • 1 can pineapple chunks 20 oz, drained with 1/4 cup juice reserved
  • 1 cup granulated sugar
  • 3 tbsp flour
  • 2 cups sharp cheddar cheese shredded
  • 1 sleeve Ritz crackers crushed
  • 1/2 cup butter melted

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a mixing bowl, combine the pineapple chunks, reserved juice, sugar, and flour. Stir well.
  • Fold in the shredded cheddar cheese, then transfer the mixture to the prepared dish.
  • Mix the crushed Ritz crackers with melted butter, then spread evenly over the casserole.
  • Bake for 25–30 minutes, until the top is golden brown and bubbling.
  • Let it cool slightly before serving. Enjoy warm!

Notes

To make it ahead, prep the base and topping separately, refrigerate, and bake when ready. Try adding ham or chopped nuts for variety. For a dessert version, reduce cheese and add cinnamon and graham crackers.
