Instructions
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a blender or food processor, blend the cottage cheese, eggs, and seasonings until smooth.
Spread the mixture evenly onto the lined baking sheet, forming a thin layer.
Bake for 35-40 minutes, or until the edges are golden and the center is set.
Allow to cool before slicing and serving.
Notes
For a crispier texture, broil the flatbread for 2-3 minutes after baking. You can also add shredded cheese for extra flavor.
