Equipment

  • Non-stick skillet or griddle
  • Cheese grater
  • Spatula
  • Sharp knife

Ingredients

Burrito Base

  • 2 large flour tortillas 10-inch or larger

Cheese Selection

  • 1/2 cup cheddar cheese shredded
  • 1/2 cup Monterey Jack cheese shredded

Protein Filling

  • 1/2 lb ground beef or substitute with grilled chicken or black beans
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder

Sauces & Toppings

  • 2 tbsp nacho cheese sauce or substitute with sour cream
  • 1/4 cup pico de gallo or diced tomatoes
  • jalapeños optional, sliced

Instructions

  • Cook the ground beef in a skillet over medium heat, breaking it up as it cooks. Add chili powder, smoked paprika, cumin, and garlic powder. Stir well and cook until browned.
  • Warm the flour tortillas in a pan or microwave for 10-15 seconds to make them pliable.
  • Lay a tortilla flat and spread a thin layer of nacho cheese sauce or sour cream. Add the cooked beef, shredded cheese, pico de gallo, and jalapeños if using.
  • Roll the burrito tightly by folding in the sides first, then rolling from the bottom up.
  • Sprinkle additional shredded cheese onto a heated skillet and place the burrito seam-side down. Cook for 2-3 minutes until the cheese forms a crispy crust.
  • Flip the burrito carefully and cook for another 2-3 minutes on the other side until golden and crispy.

Notes

For a spicy kick, add hot sauce or use pepper jack cheese instead of cheddar.
