Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots diced
  • 2 cloves garlic minced
  • 4 cups gluten-free vegetable broth
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Vegetables & Herbs

  • 1 cup zucchini diced
  • 1 cup green beans chopped
  • 1 cup diced tomatoes canned or fresh
  • 1 tsp Italian seasoning
  • 1/2 cup chopped fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and carrots. Sauté for 5 minutes until softened.
  • Stir in garlic and cook for another 30 seconds until fragrant.
  • Pour in the gluten-free vegetable broth, salt, and black pepper. Bring to a simmer.
  • Add zucchini, green beans, diced tomatoes, and Italian seasoning. Simmer for 20 minutes until vegetables are tender.
  • Remove from heat and stir in fresh parsley before serving.

Notes

Feel free to customize the soup by adding chickpeas, quinoa, or other favorite gluten-free ingredients.
