Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onions and carrots. Sauté for 5 minutes until softened.
Stir in garlic and cook for another 30 seconds until fragrant.
Pour in the gluten-free vegetable broth, salt, and black pepper. Bring to a simmer.
Add zucchini, green beans, diced tomatoes, and Italian seasoning. Simmer for 20 minutes until vegetables are tender.
Remove from heat and stir in fresh parsley before serving.
Notes
