Ingredients
  

Dry Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup mixed nuts such as almonds, pecans, walnuts, roughly chopped
  • 1 tsp ground cinnamon

Wet Ingredients

  • 1/3 cup honey or maple syrup
  • 1/3 cup melted coconut oil or butter
  • 1.5 tsp vanilla extract

Optional Add-ins (after baking)

  • 1/2 cup dried fruits e.g. cranberries, raisins, chopped dates
  • 1/4 cup chocolate chips dairy-free if needed

Instructions
 

  • Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the oats, chopped nuts, and cinnamon.
  • In a separate bowl, whisk together the honey or maple syrup, melted coconut oil or butter, and vanilla extract.
  • Pour the wet ingredients over the dry and stir until well coated.
  • Spread the granola mixture evenly on the baking sheet. Press lightly with a spatula if you prefer clusters.
  • Bake for 20–25 minutes, stirring halfway. Watch closely at the end to avoid burning.
  • Let cool completely before adding dried fruits or chocolate chips. Store in an airtight container.

Notes

Customize your batch with coconut flakes, seeds, or nut butters. Press the granola down for clumps, and stir minimally to keep clusters intact!
