Ingredients
  

Chicken and Sauce

  • 2 lbs boneless skinless chicken thighs or breasts
  • 1/2 cup honey
  • 2-3 chipotle peppers in adobo sauce, finely chopped
  • 2 tbsp adobo sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp lime juice freshly squeezed
  • 1/2 cup tomato sauce
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • 1 tbsp olive oil optional, for extra richness

Instructions
 

  • Place the chicken thighs or breasts into the slow cooker. Season lightly with salt and pepper.
  • In a mixing bowl, whisk together the honey, chopped chipotle peppers, adobo sauce, apple cider vinegar, lime juice, tomato sauce, paprika, cumin, garlic powder, and olive oil.
  • Pour the sauce evenly over the chicken in the slow cooker. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • Once cooked, shred the chicken with two forks and let it soak in the sauce for an additional 10-15 minutes on warm.
  • Serve hot with tortillas, over salads, or in buns. Garnish with fresh cilantro and lime wedges if desired.

Notes

Adjust the spice level by adding fewer or more chipotle peppers. This chicken also freezes beautifully for quick meals later!
