  • Rice Cooker or Pot

Ingredients

Spider Roll Ingredients

  • 2 soft shell crabs cleaned
  • 1 cup tempura batter prepared
  • 2 cups cooked sushi rice seasoned with rice vinegar, sugar, and salt
  • 2 nori sheets
  • 1 avocado sliced
  • 1/2 cucumber cut into matchsticks
  • 2 tbsp eel sauce for topping
  • 2 tbsp spicy mayo optional, for topping
  • 1 tbsp masago optional, for garnish

Instructions

  • Dip the soft shell crabs in tempura batter and fry until golden brown. Let cool on paper towels.
  • Lay a sheet of nori on a bamboo mat. Spread a thin layer of sushi rice evenly across the nori. Flip the nori so the rice side is down.
  • Add crab, avocado, and cucumber in a line across the bottom third of the nori.
  • Roll tightly using the bamboo mat, applying gentle pressure to seal.
  • Slice into 6–8 pieces with a wet, sharp knife. Drizzle with eel sauce and spicy mayo. Sprinkle with masago if using.

Notes

For extra crunch, top with tempura flakes. Substitute tempura shrimp or grilled crab if soft shell crab isn’t available. Serve with soy sauce and pickled ginger for the full sushi experience!
