Ingredients
  

Cheese Sauce Base

  • 1 lb mozzarella cheese freshly grated
  • 1 lb Colby Jack cheese freshly grated
  • 0.5 lb sharp cheddar cheese freshly grated
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cans evaporated milk 12 oz each
  • 1 tbsp Dijon mustard
  • 1 tsp paprika

Pasta

  • 1 lb cavatappi pasta

Topping

  • 1 cup breadcrumbs optional
  • 0.5 cup cheddar cheese for topping

Instructions
 

  • Preheat oven to 375°F (190°C). Cook cavatappi pasta in salted water until al dente. Drain and set aside.
  • In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.
  • Slowly whisk in evaporated milk until smooth and thickened, about 3–5 minutes.
  • Add Dijon mustard and paprika. Stir in mozzarella, Colby Jack, and cheddar cheese gradually until melted and smooth.
  • Fold the cooked pasta into the cheese sauce until well coated.
  • Transfer the mixture to a greased baking dish. Top with breadcrumbs and extra cheddar cheese if desired.
  • Bake for 20–25 minutes until bubbly and golden on top. Serve hot and enjoy!

Notes

For extra spice, add a pinch of cayenne pepper. Feel free to swap cheeses or mix in jalapeños, bacon, or lobster for a twist.
